Crustless Quiche
Quiche is one of those things that is so simple to make and you can make it a thousand different ways. It's a great breakfast dish. But then again it goes well with brunch too. Maybe a salad and quiche for lunch or dinner. Yes, quiche is so versatile. 

Quiche is one of my favorite foods. I love that I can spend a little time preparing a beautiful quiche and eat it the next day also. It reheats easily in a microwave which makes it great to take to work for lunch. My ingredients are ham, mushroom, fresh spinach, pepper jack cheese, heavy whipping cream and eggs. That's it. Oh, and salt and pepper..of course. I can hear the Chopped judges yelling salt and pepper in my ear all the time. Not that I've ever been on the show, but it would be fun. Guy's Grocery Games are more my speed if I were to ever try out for any cooking show.


Looks pretty tasty, doesn't it? Trust me...it's amazing.

Makes 6 servings

Ingredients:
4 Ounces Cooked Ham 
4 Ounces  Pepper Jack Cheese
2 Ounces Fresh Spinach
2 Ounces Fresh Mushrooms
1/2 Cup Heavy Whipping Cream
8 eggs
Salt and Pepper to taste. 



Preheat oven to 350 degrees. Butter or spray a 9 inch pie pan and set aside.

Chop your ham into small cubes and cube your cheese too. Some people like to shred their cheese, but I prefer mine cubed. It's up to you, it's your quiche. Next rough chop your spinach and chop your mushrooms. Now crack all your eggs in one bowl and add the heavy whipping cream, salt and pepper. Mix well. Put all your chopped ingredients into the pie pan then carefully pour the egg mixture over the chopped ingredients. It should all fit. 

Put the quiche into the oven and bake for about 30 minutes. If it still jiggles in the middle, let it bake a little longer. Remove from the oven and put on a cooling rack so the air can circulate under the dish as well as around it. Let the quiche set at least 10 minutes before serving.

I sincerely hope you enjoy this quiche. I found it to be very flavorful with just enough spice to keep it interesting. If you don't have, or don't like pepper jack cheese use whatever cheese you like. Cheddar, Mozzarella, even cream cheese would be good.
