Garlic Scape and Shrimp Zoodles
This is such a quick and simple recipe, it may soon become one of your favorites. In about 10 minutes you can have a beautiful and tasty low carb meal. No, I promise you it won't take very long at all and you can even prep this ahead of time, put it in a microwave-safe container and take it to work with you without cooking it first. You can easily double or triple this recipe if you like.
Ingredients:
5 Large frozen (thawed) or fresh shrimp with tails off or on. It's your choice.
4 Ounces Zoodle (Zucchini) Noodles. If you don't have a spiral cutter, you can simply use a box shredder and using the large shredder side shred 4 ounces of zucchini into a bowl.
2 Tbls. Pureed Garlic Scape (if you don't have access to garlic scapes, just use one clove of good garlic minced.)
2 Tbls. Extra Virgin Olive Oil
Salt and pepper to taste.
Fresh grated Parmesan or Romano Cheese (optional)
Preparation:
In a medium-size skillet add the olive and chopped garlic or garlic scapes and cook for about a minute. Add the shrimp and let it cook for about 5 minutes or until done. Add the zoodles stir well and cover. Turn the heat off and let the zoodles steam to cook for a few minutes. Stir and top with a sprinkle of parmesan or Romano cheese, salt, and pepper, if you like, and enjoy.
